Okay, I get that stock is important. But, hey, what’s good enough for Madeleine Kamman (in this case, a Knorr boullion cube) is probably good enough for the average home cook. Also, NYT fact-checkers totally let Bittman slide by with the assertion that water simmered with some gimpy root vegetables for ten minutes tastes better than the chemical-laden MSG taste so many of us grew up with. But let’s not get persnickety. I just hope nobody actually replaces their boullion with another so-called kitchen staple: fish sauce.
